There are a few things every coffee connoisseur should know about the coffee they’re drinking…

Pikes Perk Coffee has been a Colorado staple for over 25 years. We source only the highest quality, fair-trade, single origin arabica beans from around the world. We then air roast and water cool our beans to lock in exceptional flavor and aroma. The end result is unrivaled quality in every drop.

Andrew and Lauren Morton are the new owners of Pikes Perk Coffee. Lauren was born and raised in Colorado. Andrew joined the Air Force in 2002 and was stationed in Colorado in 2005. Andrew is an Afghanistan conflict veteran. Lauren and Andrew have been associating coffee with outdoor adventures since 2007.

In 2013, the Mortons decided to take a leap into the unknown and moved to Alaska for no other reason than “we just wanted to”. They explored their new home state every chance they had, from Valdez to Delta Junction to Hope to Halibut Cove to Kennicott. Living in Alaska taught them to be more self-sufficient, prepare for the worst, slow down, and enjoy the little things…like a good cup of coffee.

While in Alaska, Lauren was the operations manager for an emergency ambulance service, operated a non-profit animal rescue, and worked as a quality analyst for the Department

of Defense. Her business savvy skills and eye for detail has prepared her to operate the behind the scenes of Pikes Perk. Andrew managed a live-fire range for the Army and has the technical skills to operate the roasting facility, interface with customers about their coffee needs, wants, and hopes, and provide exceptional customer service. His knowledge of coffee, the roasting process, grind differences, brewing styles, will be passed on to the customer to ensure that each cup of coffee they are preparing is high quality and leaves them wanting another cup of Pikes Perk coffee.

Lauren and Andrew returned to Colorado, their foundational roots, in 2024. In the spirit of adventure and growth, they purchased Pikes Perk in 2025. They are choosing to retain the roasting profiles developed over the past two decades that Colorado Springs has enjoyed for the last 20+ years.

Coloradans like their coffee with a bit of altitude; aromatic and bold. Come with us and elevate your morning! Pikes Perk Coffee.
